Miso-glazed cod topcook.tomathouse.com
Ingredients:
- 6 black cod or cod fillets (170 g)
- 1/3 cup low-salt white miso paste
- 1/4 cup dark brown sugar
- 1 teaspoon toasted sesame oil
- 2 tablespoons mirin (Japanese table wine)
- Toasted sesame seeds and green onions for garnish (optional)
Preparation:
- Preheat the oven grill.
Rinse the fish and pat dry with paper towels. Combine miso, brown sugar, sesame oil, and mirin, stirring well until the sugar is completely dissolved.
- Brush each fish fillet with 2 tablespoons of miso glaze. Marinate for at least 30 minutes or up to 1 hour. Grill the fish for 3-4 minutes, until the surface is lightly browned and the glaze is caramelized.
Remove the fish from the oven and brush with the remaining glaze. Reduce the oven temperature to 190°C (375°F). Bake for another 5-6 minutes, until the fish begins to fall apart, but be careful not to overcook it.
Serve with toasted sesame seeds and green onions, if desired.
