Braised Turkey Drumsticks topcook.tomathouse.com
Ingredients:
- 2 bottles (350 ml) of Guinness beer
- 1.5 cups veal broth or canned beef broth
- 2 tbsp tomato paste
- 1/4 cup olive oil
- 2 teaspoons of salt
- 1 teaspoon ground black pepper
- 1 cup finely diced onion
- 1/2 cup finely diced carrots
- 1/2 cup finely diced celery
- 1/4 cup finely diced leeks
- 1 tbsp. minced garlic
- 1 tbsp chopped green onions (white parts only)
- 2 tsp. chopped ginger
- 900 g (about 4-6) turkey drumsticks, cut crosswise, osso buco style
- 2.5 tbsp. wheat flour
- 1/2 tsp ground allspice
- 1 tbsp chopped fresh parsley leaves
Preparation:
- Heat olive oil in a large Dutch oven over medium heat. Season the turkey with salt and pepper. Add half of the turkey legs to the pan and cook until well browned on both sides, about 3-4 minutes per side.
Once browned, transfer the roasted drumsticks to a platter and roast the remaining drumsticks. Once the turkey is cooked through, add the onion, carrot, and celery to the roasting pan. Cook until tender, about 3-4 minutes.
- Place the leeks, green onions, and ginger in a roasting pan and cook for 1 minute, stirring frequently. Add the tomato paste and stir well. Sprinkle the flour over the vegetables and stir. Cook, stirring, for 3 minutes. Pour in the Guinness and increase the heat to medium-high. Bring the beer to a boil and simmer for 5 minutes.
Add the broth and allspice, stir, and return the drumsticks to the roasting pan. Bring the contents of the pan back to a boil, then reduce the heat to a simmer. Cover the roasting pan and continue cooking the drumsticks until tender, about 2-2.5 hours. Remove the lid and stir in the chopped parsley. Serve immediately with cooked white rice.
