topcook.tomathouse.com

Ingredients:

  • 450 g pizza dough, divided into 4 pieces
  • 1 can (800 g) diced tomatoes
  • 1 tbsp tomato paste
  • 2 tbsp. coarsely grated mozzarella cheese
  • 340 g of thinly sliced pepperoni
  • 1 tbsp olive oil, plus more for greasing
  • 1/2 small onion, diced
  • 1 crushed clove of garlic
  • 1/2 teaspoon sugar
  • Salt and crushed black pepper
  • 4-6 fresh basil leaves (torn into pieces)
  • Grated Parmesan to taste
  • Flour for working with dough

Preparation:

  1. In a small saucepan, heat the olive oil over medium-low heat. Add the onion and sauté until translucent, 2-3 minutes. Add the garlic and sauté for 1 minute. Add the tomato paste and sauté for another minute.

Add diced tomatoes, sugar, salt, and pepper. Add basil leaves and bring the contents of the saucepan to a gentle simmer. Cook for about 15 minutes while you work with the dough.
  2. Preheat oven to 400°F (205°C). Roll out the dough on a lightly floured surface into four equal-sized circles. Top half of each circle with some mozzarella, then a few slices of pepperoni.

Fold in half to enclose the filling, then pinch the edges to create a nice seam. Place the calzone on a baking sheet, brush with olive oil, and sprinkle with grated Parmesan.

Bake until golden brown, 10-15 minutes. Serve with tomato sauce in a separate ceramic bowl.
