Cucumber and Baked Onion Salad with Mint-Yogurt Dressing

Ingredients:

  • 2 red onions, peeled and sliced ​​1 cm thick across
  • 3 cucumbers (peeled, halved lengthwise and sliced ​​1 cm thick)
  • Olive oil
  • Salt and pepper
  • 3 tablespoons fresh oregano
  • 1/2 cup crumbled feta cheese

    Mint-yogurt dressing:

  • 1 cup natural yogurt (place in a fine-mesh sieve for 30 minutes to drain off excess whey)
  • 2 tbsp. l. sesame tahini paste
  • 1 tbsp. l. olive oil
  • 2 tablespoons fresh lemon juice
  • 2 finely chopped cloves of garlic
  • 1/4 tsp cumin
  • 1/4 cup thinly sliced ​​mint
  • Salt and freshly ground black pepper

Preparation:

  1. Preheat the grill. Brush the onion rings with olive oil on both sides and season with salt and pepper to taste. Grill for 2-3 minutes per side, until charred and partially cooked through. Remove from the grill and chop coarsely.

    In a medium bowl, combine the onion, cucumber, and oregano, and toss with the mint-yogurt dressing. Season with salt and pepper to taste. Sprinkle with feta cheese.
