Ingredients:

- 1 tbsp balsamic vinegar
- 2 teaspoons firmly packed dark brown sugar
- 2 tablespoons extra-virgin olive oil
- 3 tablespoons freshly grated ginger
- Coarse salt and ground black pepper
Salad
- 3 cups cherry tomatoes, halved
- 1/4 cup fresh basil
- 8 inner celery stalks with leaves (from 1 bunch), thinly sliced
- Toasted slices of crispy bread for serving

In a medium bowl, combine the apple cider vinegar, balsamic vinegar, brown sugar, salt, and black pepper to taste. Stir in the olive oil and ginger. Taste and adjust the seasoning.
- Place the tomatoes in a bowl and season with salt. Use scissors to trim the basil leaves. Toss the tomatoes with the dressing. Spoon the tomato, celery, and ginger salad onto the grilled bread.
