Spicy Potato Chips

Ingredients:

  • 2.3 kg unpeeled potatoes
  • 2 teaspoons garlic salt
  • 2 tsp paprika
  • 2 tsp black pepper
  • 1/4 tsp cayenne pepper
  • 1/4 teaspoon coarse salt
  • Vegetable oil for frying

Preparation:

  1. Wash the potatoes thoroughly. Using a mandoline or vegetable slicer, slice the potatoes as thinly as possible, placing them in cold water. Combine the garlic salt, paprika, black pepper, cayenne pepper, and salt in a small bowl and set aside.
  2. Heat a little vegetable oil in two heavy-bottomed Dutch ovens to 190°C (attach a deep-fry thermometer to maintain the correct temperature!). Place the potatoes on a baking sheet lined with paper towels and pat dry with more paper towels.
  3. Using a spatula, lower the potatoes into the oil in batches. They will fry very quickly, about 1.5 minutes at a time; remove with a spatula when the chips are golden and crispy. Sprinkle with the spice mixture immediately.
