Salmon with grapefruit salsa

Ingredients:

    Spice mix

  • 1.5 tsp paprika
  • 1 tsp onion powder
  • 1 teaspoon garlic powder
  • 1/4 teaspoon salt
  • 0.5 tsp oregano
  • 1/4 teaspoon thyme
  • 1/4 tsp finely ground black pepper
  • 1/8 tsp cayenne pepper
  • 1.5 tsp. brown sugar
  • 450 g salmon fillet
  • 2 tsp corn oil

    Grapefruit salsa

  • 2 cups canned grapefruit wedges or 3 fresh grapefruits, peeled and cut into wedges
  • 1/3 cup chopped green onions
  • 1/4 cup chopped red bell pepper
  • 1/4 cup chopped fresh cilantro
  • 1 jalapeño pepper, diced

Preparation:

  1. Preheat oven to 190°C.
  2. Combine paprika, onion powder, garlic powder, salt, oregano, thyme, black pepper, cayenne pepper, and brown sugar in a small bowl. Cut the salmon into quarters and brush with oil.
  3. Spread the spice mixture over the fish pieces, generously rubbing them over the entire surface. Place the salmon on a shallow, rimmed baking sheet.
  4. Bake for 15-20 minutes, until the fish is firm. Cut the grapefruit into bite-sized pieces.
  5. Combine all the salsa ingredients and serve with the salmon. The grapefruit salsa can be made ahead of time and refrigerated until ready to serve.
