Quick Egg Salad with Ham topcook.tomathouse.com
Ingredients:
Salad
- 1/3 cup mayonnaise
- 1/4 cup finely chopped red onion (about a quarter of a small head)
- 2 heaping tablespoons English mustard
- 0.5 tsp. sriracha seasoning
- 6-8 pickled hot cherry pepper rings, chopped
- 3 finely chopped green onions
- 6 hard-boiled eggs, thinly sliced
- 2 cups ham, cut into 1cm cubes.
Sandwiches
- 8 slices of white bread toast
- A few lettuce leaves
- 8 very thin slices of non-hybrid tomatoes
- 4 very thin rings of red onion
Preparation:
- Salad:
Place mayonnaise, red onion, mustard, Sriracha, cherry pepper, green onion, a few turns of black pepper grinder and mix in a large bowl.
- Add the eggs and mix gently, then add the ham and mix well. Refrigerate for at least 30 minutes.
- Assemble sandwiches with white toast, egg salad, lettuce, tomato and onion.
