Oven-baked BBQ beer wings with tangy mustard sauce topcook.tomathouse.com
Ingredients:
Wings
- Vegetable oil
- 2 kg chicken wings, cut in half (remove the tips)
- 0.33 liters of beer
- 1/2 cup barbecue sauce, such as Uncle Ben's
- 2 tablespoons light brown sugar
- 2 tablespoons chipotle hot sauce
Dip sauce
- 0.5 cup mayonnaise
- 3 tablespoons Dijon mustard
- Zest and juice of 1 lemon
- Half a clove of garlic, finely grated
Preparation:
- Dip sauce:
In a bowl, combine mayonnaise, mustard, lemon zest and juice, garlic, and 0.5 teaspoon salt. Refrigerate until ready to serve.
- Preheat oven to 220°C. Generously grease 2 rimmed baking sheets.
- Wings:
In a large bowl, toss the wings with 2 teaspoons of salt and a few grinds of black pepper. Arrange them in a single layer on the prepared baking sheets. Bake until very crisp, about 55 minutes.
- Meanwhile, combine the beer, barbecue sauce, brown sugar, and hot sauce in a small saucepan and bring to a boil over medium-high heat. Reduce the heat slightly and simmer until the sauce becomes syrupy and coats the back of a spoon, about 20 minutes.
- Transfer the baked wings to a clean large bowl and drizzle with the beer glaze. Serve with dipping sauce.
