Strawberry and Cream Panini topcook.tomathouse.com
Ingredients:
- 1/4 cup butter
- 1/4 cup ricotta
- 1/4 tbsp. roasted hazelnuts
- 220 g of hulled and halved strawberries
- 1 teaspoon of honey
- 1 tsp orange zest (from half an orange)
- 1/8 tsp salt
- 8 slices brioche, 1cm thick.
- 1/4 cup sugar
- 1 teaspoon ground cinnamon
- 4 tablespoons unsalted butter at room temperature
Preparation:
- In a food processor, combine the cream cheese, ricotta, hazelnuts, strawberries, honey, orange zest, and salt and process until smooth. Spread about 1/4 cup of the mixture onto 4 brioche slices. Top with the remaining slices, like sandwiches.
- Mix sugar and cinnamon in a small bowl.
- Heat a large nonstick skillet over medium heat. Alternatively, use a panini press. Spread 1 tablespoon butter on both sides of each sandwich, then sprinkle with cinnamon sugar.
- Place the sandwiches in the pan and cook until golden brown and caramelized, 2-3 minutes per side. Let the panini rest for 1 minute, then cut in half. Serve immediately.
