Orange coquito

Ingredients:

  • 800 gr. coconut milk
  • 800 g of condensed milk with sugar
  • 560 g of unsweetened condensed milk
  • 240 ml orange juice
  • 0.5 tsp pumpkin pie spice mix + extra for serving
  • 1/4 tsp natural vanilla extract
  • 4 egg yolks
  • 240 ml white rum
  • 240 ml orange liqueur
  • Zest of 1 orange
  • Special equipment: 12 shot glasses or small glasses

Preparation:

  1. In a large saucepan, combine the coconut milk, evaporated milk, unsweetened condensed milk, orange juice, pumpkin pie spice, vanilla, and egg yolks. Place over medium-low heat. Whisk vigorously to combine the yolks and cook until smooth and foamy, 5-8 minutes. Keep whisking! This will require some elbow grease.
  2. Remove from heat and add rum and orange liqueur. Chill the mixture in an ice bath. Alternatively, pour the coquito into three 1-liter bottles or a 4-liter pitcher and refrigerate for 2 hours until completely chilled.
  3. Serve the coquito in shot glasses, garnished with orange zest and pumpkin pie spice. Serve over ice.
