Sunny Pasta Salad

Ingredients:

  • 450 g penne pasta (feathers)
  • 4 cups red grape tomatoes, halved
  • 4 cups yellow grape tomatoes, halved
  • 2 cups frozen corn, thawed
  • 1 red bell pepper, seeded and cut into strips
  • 1 orange bell pepper, seeded and cut into strips
  • 1 yellow bell pepper, seeded and cut into strips
  • One can (450g) banana peppers, drained and thinly sliced
  • 1 lemon, thinly sliced ​​for serving

Preparation:

  1. Solar refueling:

    In a medium bowl, combine mayonnaise, sour cream, mustard, lemon zest, lemon juice, garlic, salt and black pepper and mix until smooth.
  2. Salad:

    Cook the pasta in salted water according to package directions. Drain and rinse under cold water. Let it dry slightly to allow the dressing to adhere well.
  3. Pour the sauce over the pasta in a large bowl and toss to coat. Add the grape tomatoes, corn, bell peppers, and banana peppers and gently toss to distribute the ingredients evenly. Transfer the salad to a serving platter and garnish with lemon wedges.
