Ingredients:
- 0.5 cup raw cashews
- 2 cups vanilla almond milk
- 2 apples (preferably 1 Granny Smith and 1 Honeycrisp), cored and cut into pieces
- 1/4 cup honey
- 1/4 cup lemon juice
- 0.5 tsp apple pie spice mix + extra for sprinkling
Preparation:
- Place cashews in a bowl, pour in 1 cup almond milk and let sit for 8 hours or overnight in the refrigerator.
- In a blender, combine the apples, honey, lemon juice, apple pie spice, soaked cashews with milk, and the remaining 1 cup of milk. Blend until smooth. Chill or serve over ice, sprinkled with apple pie spice.
