Apple Pie Lassi

Ingredients:

  • 0.5 cup raw cashews
  • 2 cups vanilla almond milk
  • 2 apples (preferably 1 Granny Smith and 1 Honeycrisp), cored and cut into pieces
  • 1/4 cup honey
  • 1/4 cup lemon juice
  • 0.5 tsp apple pie spice mix + extra for sprinkling

Preparation:

  1. Place cashews in a bowl, pour in 1 cup almond milk and let sit for 8 hours or overnight in the refrigerator.
  2. In a blender, combine the apples, honey, lemon juice, apple pie spice, soaked cashews with milk, and the remaining 1 cup of milk. Blend until smooth. Chill or serve over ice, sprinkled with apple pie spice.
