Shrimp Ceviche

Ingredients:

  • 450g high quality medium raw shrimp, shells, veins, tails removed and thinly sliced
  • 1 cup freshly squeezed lime juice
  • 1 cup cucumbers, peeled, seeded and finely chopped
  • 1 cup tomatoes, seeded and finely chopped
  • 0.5 cup chopped fresh cilantro
  • 0.5 cup finely chopped red onion
  • 1 serrano pepper, seeded and finely chopped
  • Saltine crackers for serving
  • Hot sauce
  • Lime wedges

Preparation:

  1. Place the shrimp in a large bowl. Add 1/2 cup lime juice and let sit for 15 minutes to allow the shrimp to "cook" in the lime juice (any less and they'll be too raw, any more and they'll become tougher).
  2. Meanwhile, in a separate large bowl, combine the remaining 1/2 cup lime juice, cucumbers, tomatoes, cilantro, red onion, and serrano chile until smooth. Transfer the vegetable mixture to the shrimp bowl and toss well. Season the ceviche with salt. Serve with saltine crackers, hot sauce, and lime wedges, if desired.
