Traditional Chinese fried rice

Ingredients:

  • 3 eggs
  • 2 tablespoons of crushed garlic
  • 2 tablespoons chopped ginger
  • 1 bunch chopped green onions, white parts separated from green parts
  • 1 Chinese lak cheong sausage, diced, can be substituted with 4 strips of fried bacon
  • 8 cups cooked long grain rice, left over from the day before
  • 3 tablespoons liquid soy sauce
  • 0.5 tsp white pepper

Preparation:

  1. Add 2 tablespoons of oil to the wok and quickly fry the scrambled eggs. Remove the eggs. Drizzle the wok with oil and stir-fry the garlic and ginger.
  2. Add the white part of the green onions and lap cheong. Add the rice and mix thoroughly. Add the soy sauce, white pepper, and fried egg. Taste. Serve immediately.
