Wild rice with citrus

Ingredients:

  • 2 oranges + 0.5 cup freshly squeezed orange juice
  • 1.5 cups wild rice mixture
  • 1 tbsp extra-virgin olive oil
  • 1/3 cup chopped mint
  • 1/3 cup chopped pistachios

Preparation:

  1. Bring 2.5 cups of water and orange juice to a boil. Add the rice, olive oil, and 1 teaspoon of coarse salt and simmer, covered, until the rice is tender, 20–25 minutes. Let cool slightly, then stir in the mint and pistachios.
  2. Peel the remaining two oranges and cut segments from the membranes; add to the rice and squeeze the juice from the membranes. Stir and season with salt to taste.
