Ingredients:
- 1 tbsp. butter
- 1 egg, lightly beaten
- 0.5 cup finely chopped onion
- 1 kg frozen chopped spinach, thawed and drained
- 9 sheets of filo dough
- 1 cup crumbled feta
- 110 g melted butter
Preparation:
- Melt the butter in a skillet and sauté the onion for about 3 minutes, or until softened. Remove from heat and add the spinach, feta, and egg. Season with salt and pepper.
- Preheat oven to 190°C.
- Place one sheet of dough on top and grease with butter. Place another sheet of dough on top and grease with butter, then top with a third sheet and grease with butter. Using a sharp knife, cut the rectangle into three equal-sized pieces. Place 1 tablespoon of spinach filling in the bottom left corner of one of the pieces and fold into a triangle: fold the bottom corner up to form a triangle, and continue folding to form a triangle.
- Place the triangles on a baking sheet. At this point, the pies can be frozen and stored in a tightly sealed container. Bake for 15 minutes or until golden brown.
