Ingredients:
- 1 cup bulgur
- 1/4 cup extra-virgin olive oil
- 2 tablespoons red wine vinegar
- Half a small shallot, finely chopped
- 1 tsp ground cumin
- 1 teaspoon Dijon mustard
- 2 cups shredded grilled chicken
- 2 cups shredded kale
- 1 tbsp. shredded romaine lettuce
- 0.5 cup chopped cucumber
- 0.5 cup chopped red bell pepper
- 0.5 cups chopped cherry tomatoes
- Hummus, for serving
- Chopped fresh parsley, for serving
- Pita, for serving
Preparation:
- Cook bulgur according to package directions; add salt to taste.
- In a medium bowl, combine the olive oil, vinegar, shallot, cumin, and mustard; season with salt and pepper to taste. In a separate bowl, combine half of the dressing with the chicken. Combine the remaining dressing with the kale, romaine lettuce, cucumber, bell pepper, and tomatoes.
- Divide the bulgur into 4 bowls and top with the coleslaw and chicken. Drizzle with hummus and sprinkle with parsley. Serve the bowls with pita bread.
