Ingredients:
Masala spice mix
- 1/4 cup unsweetened coconut flakes
- 3 tablespoons of sugar
- 2 teaspoons garam masala spice
- 1 teaspoon curry powder
- 0.5 tsp ground turmeric
Nuts
- Vegetable or canola oil to grease the baking sheet
- Protein of 1 large egg
- 3 cups unsalted raw pistachios
- 1 cup unsalted raw peanuts
- 1 cup mini pretzels
- 1 cup potato chips
- 0.5 tbsp. corn nuts
- 0.5 cup chopped dried mango
Preparation:
- Combine coconut, sugar, garam masala, curry powder, turmeric, if using, and 1.5 teaspoons salt in a small bowl and set aside.
- Preheat oven to 175°C. Lightly grease a rimmed baking sheet with vegetable oil.
- Nuts:
Place the egg white in a large bowl and whisk until foamy. Add the nuts, pretzels, chips, and corn nuts and stir to coat. Add the spice mixture and stir to coat.
- Spread the nut mixture evenly on the prepared baking sheet and bake, stirring occasionally, until golden brown, 15-20 minutes. Let cool on the baking sheet.
- Transfer the nut mixture to a large bowl and stir in the dried mango.
