Ingredients:
Creamy Horseradish Sauce
- 0.5 cup mayonnaise
- 0.5 cup sour cream
- 1/4 cup horseradish
- 2 teaspoons of honey
- 2 teaspoons Dijon mustard
Crispy onions
- 2 cups of sour milk or kefir
- 2 onions, thinly sliced lengthwise
- Vegetable oil for frying
- 2 cups of flour
- 2 tsp cayenne pepper
- 2 tsp paprika
Sandwiches
- 8 fresh onion buns, halved, brushed with butter and toasted until golden brown
- 4 thick slices sharp cheddar
- 900 g high-quality roast beef, medium rare, thinly sliced
Preparation:
- Horseradish sauce:
In a bowl, combine mayonnaise, sour cream, horseradish, honey, and Dijon mustard. Season with salt and pepper.
- In a medium sized cauldron, heat 7 cm of vegetable oil to 175°C. Pour the sour milk over the onions and let them steep for about 30 minutes.
- Deep-fried onions:
Mix flour, cayenne pepper, paprika, and a little salt and black pepper. Remove the onions from the sour milk and thoroughly coat them in the flour. Fry in batches until golden, 2-3 minutes. Transfer to paper towels to drain excess oil, and season with salt while the onions are hot.
- Sandwiches:
Place a slice of cheddar on toasted onion buns, pile the roast beef on top, add as many crispy onions as will fit in the sandwich, then spread a generous amount of horseradish sauce on the top half of the bun and sandwich.
