Ingredients:
- 1/4 cup extra-virgin olive oil
- 1 medium onion, finely chopped (about 2 cups)
- 450 g of ground beef with 20% fat content
- 2 cups frozen chopped green beans, thawed (200 g)
- 1 and 3/4 cups frozen corn kernels, thawed (200 g)
- 2 cans of 280 gr. canned cream of mushroom soup
- 450 g frozen Tater Tots
Preparation:
- Preheat oven to 175°C.
- Heat oil in a large skillet over medium heat. Add the onion and cook until softened and beginning to brown, about 15 minutes. Add the ground beef and cook until browned, stirring and scraping the bottom of the pan, about 10 minutes. Season with salt and pepper to taste.
- Transfer the meat mixture to a 22x32 cm baking dish. Evenly distribute the green beans and corn on top. Top with the cream of mushroom soup and arrange the frozen potato balls. Bake, uncovered, for 1 hour; the potato balls should be golden brown. Serve.
