Pasta salad "Guacamole"

Ingredients:

  • 1 teaspoon extra-virgin olive oil
  • Juice of 2 limes
  • Half a clove of garlic, finely grated
  • 4 cups grape tomatoes (red and yellow), halved
  • 2 avocados, cut into 1cm pieces.
  • 220 g fusilli pasta
  • 1/4 cup fresh cilantro leaves, coarsely chopped

Preparation:

  1. In a large bowl, combine the olive oil, lime juice, garlic, and 1/2 teaspoon salt. Add the tomatoes and avocado and gently fold in the dressing. Let it sit at room temperature while you cook the pasta.
  2. Bring a large pot of salted water to a boil and add the pasta. Cook according to package directions; drain and let cool.
  3. Add the pasta and cilantro to the tomato and avocado salad and toss. Season with salt to taste, if needed.
