Grilled skirt steak with a caramel crust

Ingredients:

  • 1/4 cup brown sugar
  • 1 skirt steak weighing 450 g, trimmed of excess fat and cut into 4 pieces
  • 1 large red onion, sliced ​​into thick rings
  • Olive oil
  • 1 lime, cut into wedges, for serving

Preparation:

  1. Preheat the grill to high heat. In a small bowl, combine the brown sugar, 2 tablespoons of salt, and 1 tablespoon of black pepper. Rub the mixture over the steaks and set aside for 15-20 minutes.
  2. Drizzle the onions with olive oil and season with salt. Grill on each side until tender and charred, about 8 minutes. Set aside.
  3. Grill the steaks over high heat until crispy, about 2.5 minutes per side. Set aside and let rest for 5 minutes, then slice across the grain. Serve with fried onions and a lime wedge.
