Oven-baked barbecue chicken

Ingredients:

  • 2 large boneless, skinless chicken breast halves
  • 8 tbsp. water + 2 tbsp.
  • 3/4 cup coarse salt + 1 tsp.
  • 3/4 cup light brown sugar + 1 tbsp.
  • 3/4 cup white vinegar
  • 1 tbsp BBQ seasoning + 2 tbsp

Preparation:

  1. In a large plastic container with a lid, combine 8 cups of water, 3/4 cup of salt, 3/4 cup of brown sugar, vinegar, and 1 tablespoon of barbecue seasoning. Stir until smooth. Place the chicken in the brine and refrigerate for at least 2 hours, but no more than 4 hours.
  2. Preheat oven to 175°C.
  3. Remove the chicken from the brine and pat dry. In a small bowl, combine 1 teaspoon of salt, 1 tablespoon of brown sugar, and 2 tablespoons of barbecue seasoning. Rub the outside of the chicken with the spice mixture and transfer to a baking dish. Pour 2 tablespoons of water into the bottom of the dish and place in the oven.
  4. Bake for 45 minutes or until the internal temperature in the thickest part of the chicken reaches 160°F (71°C). Remove the chicken from the oven and place it on a cutting board. Let it rest for 5 minutes, loosely covered with foil, then slice and place on a serving platter. Enjoy!
