Healthy Waldorf Salad with Chicken and Tropical Fruits

Ingredients:

  • 1/3 cup Greek yogurt, 2% fat
  • 2 tablespoons mayonnaise
  • 1 teaspoon of honey
  • 0.5 tsp freshly grated ginger root
  • Juice of half a lemon
  • 1 cup pineapple pieces 0.5 cm in size.
  • 2 small cooked skinless, boneless chicken breasts, cut into 1cm cubes.
  • 1 small Granny Smith apple, cut into 1/2-inch cubes (cored)
  • 0.5 cup chopped fresh cilantro leaves
  • 1/3 cup coarsely chopped cashews
  • 4 lettuce or iceberg lettuce leaves

Preparation:

  1. In a large bowl, combine yogurt, mayonnaise, honey, ginger, lemon juice, and 0.5 teaspoon salt. Add pineapple, chicken, apples, and three-quarters of the cilantro and cashews. Stir and serve immediately or refrigerate for about 1 hour.
  2. Arrange the lettuce leaves on a platter and top with a spoonful of lettuce. Sprinkle with the remaining cilantro, cashews, and a few grinds of black pepper.
