Ingredients:
Cocktail
- 8 cups diced watermelon (about half a small watermelon) + extra wedges for garnish
- 240 ml chilled lemon vodka
- 200 ml simple sugar syrup, see recipe below
- 1 can (520 ml) coconut juice
- 1 lemon
Sugar syrup
- 1 cup of sugar
- 1 cup of water
Preparation:
- Chill the watermelon in the freezer for 30 minutes. Place all ingredients in a blender and blend until smooth.
- Add freshly squeezed lemon juice. Serve very cold in a chilled glass, garnished with watermelon or lemon slices.
Sugar syrup: Yield: about 1.5 cups
In a small saucepan, combine sugar and water. Heat over low heat, stirring, until the sugar dissolves. Alternatively, reheat in the microwave. Store the syrup in a sealed container in the refrigerator for up to 1 month.
