Frozen lemonade

Ingredients:

  • 14-16 lemons
  • 1.5 cups of sugar
  • Special equipment: 3 ice cube trays (12 cells each)

Preparation:

  1. Set aside 1 lemon for garnish. Using a vegetable peeler, peel the zest from 2 lemons in wide strips, being careful not to remove the white pith. Squeeze 2 tablespoons of lemon juice.
  2. Combine lemon zest strips, sugar, and 1.5 tablespoons of water in a medium saucepan and bring to a boil, stirring constantly until the sugar dissolves. Turn off the heat and add 0.5 teaspoon of salt. Remove the zest strips and let the syrup cool for 15 minutes.
  3. Pour the syrup into a pitcher and add lemon juice and 2 cups of cold water. Pour the lemonade into three ice cube trays and freeze until firm, about 8 hours or overnight. The ice cubes won't be as hard as ice.
  4. Combine frozen lemonade cubes with 0.5 cups of cold water in a blender and blend, stopping and stirring as needed, until smooth and pourable. Pour the lemonade mixture into four 240 ml glasses. Garnish each serving with a lemon wedge.
