Sweet potato fries with basil salt and garlic mayonnaise

Ingredients:

  • 5 sweet potatoes, cut into strips about 2 x 7 cm, like French fries
  • 3 tbsp. l. olive oil
  • 2 tablespoons chopped fresh basil leaves
  • 2 teaspoons coarse salt
  • 0.5 tsp freshly ground black pepper
  • 3/4 cup mayonnaise
  • 1 clove garlic, minced
  • 1 tbsp lemon juice

Preparation:

  1. Preheat oven to 200°C. Place the sweet potatoes on a foil-lined baking sheet and drizzle with olive oil. Bake until golden brown, about 45 minutes.
  2. Meanwhile, combine the basil, salt, and black pepper in a small bowl. In another small bowl, combine the mayonnaise, garlic, and lemon juice.
  3. When you remove the sweet potatoes from the oven, sprinkle them with basil salt. Serve with garlic mayonnaise for dipping.
