Ingredients:
- 1 can (400 g) low-fat coconut milk
- 3 tablespoons chia seeds
- 3 tablespoons natural maple syrup
- 0.5 cups fresh pineapple pieces
- 2 medium kiwis, peeled and thinly sliced
- 1/4 cup raspberries
- 2 tbsp chopped toasted almonds
- Special equipment: 4 glass jars with a capacity of 240 ml each with lids
Preparation:
- Combine coconut milk, chia seeds, and maple syrup in a medium bowl. Divide the mixture evenly among four 240 ml glass jars. Seal with lids and refrigerate overnight to allow the seeds to plump up and the mixture to thicken like pudding.
- Arrange the pineapple, kiwi, raspberries, and almonds in separate piles on top of the pudding. Cover and refrigerate for up to a day.
