Healthy Spaghetti with Creamy Tomato Sauce in One Skillet topcook.tomathouse.com
Ingredients:
- 250g whole grain spaghetti, broken in half
- 3 tablespoons extra-virgin olive oil
- 1 tbsp tomato paste
- 4 cloves garlic, thinly sliced
- 2 medium tomatoes, cut into pieces
- A handful of fresh basil leaves, plus extra for serving
- A large pinch of crushed red pepper flakes
- 0.5 cup grated Parmesan + extra for serving
- 60 g low-calorie cream cheese, cut into small pieces
Preparation:
- Place spaghetti, olive oil, tomato paste, garlic, tomatoes, basil, red pepper flakes and 1 teaspoon salt in a medium skillet with high sides.
- Add 5 cups of water and bring to a boil over medium-high heat. Continue cooking, stirring frequently to prevent the spaghetti from sticking, until al dente and the sauce has thickened, 6-8 minutes. Stir in the Parmesan and cream cheese (the sauce will thicken further), and season with salt to taste, if needed. Sprinkle with Parmesan and basil.
