Ingredients:

  • 1.3 kg ground beef
  • 3 cups stewed tomatoes
  • 2 yellow onions, diced
  • 3 tbsp. shredded romaine lettuce
  • 1.5 cups diced tomatoes
  • Red and/or green chili sauce
  • 6 cups finely grated cheddar

    Fried flatbread

  • 4 cups finely ground wheat flour
  • 1 tbsp baking powder
  • 1 tbsp. salt
  • 1/4 cup lard + extra for frying

Preparation:

  1. Fry the ground beef, stewed tomatoes and half of the onion in a frying pan until the meat is cooked through.
  2. Spread the beef mixture, lettuce, remaining onion, chopped tomatoes, chili sauce, and cheese over the tortilla, distributing evenly or adjusting the proportions to taste.
  3. Fried flatbread:
    Combine flour, baking powder, and salt in a mixer fitted with a dough hook. Add lard and mix for 2 minutes on medium speed. Add 2 cups of water and knead until smooth.
  4. Form the dough into 6 balls and leave them in a warm place for about 1 hour.
  5. Roll each ball into a flat cake with a diameter of 30 cm.
  6. Heat the lard in a saucepan until it begins to smoke. Drop each dough piece into the fat one at a time and fry for about 4 seconds per side until golden brown, turning at least four times during frying.
