Ingredients:
- 1 can (425g) canned corn, drained
- 1 can (425 g) creamed corn
- 1 large egg
- 1.5 cups grated sharp cheddar
- 1 cup yellow cornmeal
- 1 cup sour cream
- 90 g unsalted butter, melted
- 1/4 cup chopped fresh chives
- 1/4 cup sugar
- 2 teaspoons of baking soda
Preparation:
- Preheat oven to 175°C.
- In a large bowl, combine all the corn, creamed corn, egg, cheddar, cornmeal, sour cream, butter, chives, sugar, baking soda, 1.5 teaspoons of salt, and plenty of black pepper. Mix until smooth.
- Place everything in a 2-quart baking dish and bake until lightly golden brown and the casserole is set inside, 30 to 35 minutes.
