Blue Cheese and Bacon Truffles topcook.tomathouse.com
Ingredients:
- 170 g double-smoked bacon, finely chopped
- 2 small shallots, chopped
- 110 g of cream cheese, room temperature
- 110 g crumbled gorgonzola, room temperature
- 1.5 cups crushed pretzels
- 2 tbsp chopped fresh chives
Preparation:
- Place the bacon in a medium skillet and heat over medium heat. Cook until almost crisp, about 10 minutes. Add the shallots and cook for another 2 minutes. Using a slotted spoon, remove everything from the skillet to a bowl.
- Add the cream cheese and Gorgonzola to the bacon and onion mixture and mix well with a rubber spatula. Using a 1-tbsp ice cream scoop, scoop out small balls of the cheese mixture and roll them between your palms until smooth.
- Place on a plate, cover and refrigerate for at least 1 hour.
- When the balls are ready to serveLet them sit at room temperature for 5 minutes. Combine the crushed pretzels with the chives in a small bowl. Roll the truffles in the topping and serve.
