Ingredients:
Wings
- 4 turkey wings, separated into shoulder and elbow pieces (reserve the tips for another use)
- Vegetable oil to brush the wings
Blue cheese dip
- 0.5 cup mayonnaise
- 1/4 cup crumbled blue cheese
- 1/4 cup light cream (10%)
- 1 tbsp sour cream
- 2 teaspoons lemon juice
Sauce
- 110 g unsalted butter
- 1.5 cups hot sauce, such as Frank's Red Hot
- Carrot and celery sticks, for serving
Preparation:
Wings: Preheat the oven to 350°F (175°C). Arrange the wings in a single layer on a rack set over a baking sheet. Pat them dry with paper towels, then drizzle with a little vegetable oil and season with salt and freshly ground black pepper on all sides. Pour 1 cup of water into the bottom of the baking sheet and cover the baking sheet with foil.
- Bake for 1 hour and 30 minutes. Then remove the foil and continue baking until the wings are tender, the skin is crisp and browned, and a thermometer inserted into the thickest part of the wing registers 165°F (74°C), about 1 hour more. Let cool for 10 minutes.
Blue Cheese Dip: Meanwhile, in a bowl, combine the mayonnaise, blue cheese, heavy cream, sour cream, lemon juice, 1/4 teaspoon salt, and a pinch of freshly ground black pepper. Mix thoroughly. Set aside.
Sauce: Melt the butter in the microwave for 1-2 minutes. Add the hot sauce and stir until smooth. Brush the wings with the sauce, coating them well on all sides. Serve the wings with the remaining hot sauce, blue cheese dip, carrots, and celery.
