Spelt pilaf

Ingredients:

  • 1 cup spelt
  • 1/4 cup golden raisins
  • Pistachios, for serving

Preparation:

  1. In a saucepan over medium heat, sauté 1 finely chopped onion in 2 tablespoons butter for 5-7 minutes; season with coarse salt and black pepper.
  2. Add 1 cup spelt and 1/4 cup golden raisins; add 2 cups water and 1/2 teaspoon salt. Bring to a boil.
  3. Cover, reduce heat to medium-low and simmer until the spelt has absorbed all the water, about 35 minutes.
  4. Stir and sprinkle with finely chopped salted pistachios and fresh parsley.
