Ingredients:
- 2 tablespoons vegetable oil, such as soybean, corn, or peanut
- Half an onion, chopped
- 6 cloves garlic, crushed
- A pinch of red pepper flakes
- 1 tbsp tomato paste
- 1 can (800g) canned whole peeled tomatoes (in tomato puree), blended
- 1 tbsp. + 2 tbsp. red wine vinegar
- 1 cup light brown sugar
- 1.5 tsp coarse salt
Preparation:
- Heat vegetable oil in a medium saucepan over medium-high heat. Add the onion and cook, stirring, until lightly browned, about 4 minutes. Add the garlic and red pepper and cook, stirring frequently, until fragrant, about 45 seconds.
- Add the tomato paste and cook, stirring, until slightly darkened, another 1 minute. Add the tomatoes, vinegar, sugar, and salt and bring to a boil.
- Reduce heat and simmer, uncovered, stirring occasionally, until dark red and the sauce has reduced to about 4 cups, 25 minutes. Season with pepper to taste. Use the sauce immediately or store, covered, in the refrigerator for up to 3 days. Freeze for up to 1 month..
