Oranges in spiced honey syrup

Ingredients:

  • 4 oranges
  • 4 tablespoons unsalted butter
  • 1 small cinnamon stick
  • A pinch of cayenne pepper
  • 3 tablespoons of honey
  • Belgian waffles, pancakes, or French toast, for serving

Preparation:

  1. Remove the zest from one of the oranges and set it aside. Working with one orange at a time, cut a 0.5 cm thick slice from the top and bottom. Place the oranges cut-side down on a cutting board and peel from top to bottom. Hold the orange in one hand and, over a bowl, cut along each membrane to the center, allowing the segments to fall into the bowl. It's okay if the slices break.
  2. Squeeze the remaining membrane over a second bowl to collect all the juices; add the juices from the bowl with the oranges. Repeat with the remaining oranges.
  3. In a medium skillet over medium heat, melt the butter. Add the cinnamon stick and a pinch of cayenne pepper and cook until fragrant, about 1 minute. Add the orange juice, zest, and honey and bring to a simmer. Cook, uncovered, stirring occasionally, until the liquid thickens to a syrup, about 7 minutes more.
  4. Add the orange slices and cook until heated through. Remove from heat and discard the cinnamon stick. Drizzle the orange syrup over fried waffles, pancakes, or French toast.
