Ingredients:
- 2 large eggs
- 1 and 1/4 cups warm milk
- 1 tbsp unsalted butter, melted
- 1 cup premium flour
- Coarse salt and coarsely ground black pepper
- 1/3 cup grated Asiago cheese
- Vegetable oil to grease the pan
Preparation:
- Preheat a 12-cup metal muffin pan in the oven at 220°C for 15 minutes.
- Meanwhile, whisk the eggs, milk, and melted butter in a bowl. Stir in the flour and 1 teaspoon each of salt and black pepper; let rest for 10 minutes.
- Generously grease the 8 cups of a springform pan with vegetable oil. Add the dough and sprinkle with cheese. Bake for 20 minutes, then reduce the oven temperature to 350°F (175°C) and bake until the tops are golden brown and puffed, 14-18 minutes.
