Bruschetta with white beans

Ingredients:

  • 1 can (400g) canned cannellini beans, rinsed
  • 1 clove of garlic
  • 1.5 tbsp extra-virgin olive oil
  • 4 fresh sprigs of mint
  • 6 fresh sprigs of thyme, leaves only
  • 3 tbsp chives, chopped
  • Coarse salt and black pepper

Preparation:

  1. Combine all ingredients except the chives in a food processor and process until a smooth paste forms. Transfer to a bowl.
  2. Serve spread on bruschetta and sprinkle with finely chopped chives.
