Soft polenta with mascarpone topcook.tomathouse.com
Ingredients:
- 2 cups polenta
- 90 g unsalted butter
- Half a small onion, chopped
- 1 clove garlic, minced
- 4 cups chicken broth
- 1/4 tbsp. mascarpone cheese
- 1/4 tbsp. grated parmesan
- Chopped fresh parsley, for serving
Preparation:
- In a large saucepan over medium heat, melt 2 tablespoons of butter. Add the onion and garlic and cook until the onion is translucent, about 5 minutes. Add the chicken broth and bring to a simmer.
- Gradually stir in the polenta. Reduce heat to low and simmer, stirring frequently, until the polenta thickens, about 2 hours (adjust the consistency with water or broth if necessary).
- Remove from heat and stir in the mascarpone cheese, Parmesan, and the remaining 4 tablespoons butter. Season with salt and pepper to taste and sprinkle with parsley.
