Fried fish in crispy breading

Ingredients:

  • 4 tilapia fillets, 170 g each.
  • 340 g green beans, ends trimmed
  • 3/4 cup premium flour
  • 1/4 tsp paprika + extra for sprinkling
  • 2 large eggs
  • 1/4 cup vegetable oil
  • 1 and 1/4 cups lightly salted chicken broth
  • 1/4 cup whole milk
  • 2 tablespoons cream cheese
  • 1 tbsp chopped fresh parsley

Preparation:

  1. Place green beans in a microwave-safe bowl. Add 1/4 cup water and 0.5 teaspoon salt, cover loosely with plastic wrap, and microwave until tender, about 5 minutes.
  2. Meanwhile, sprinkle the fish on all sides with 0.5 teaspoon of salt and pepper to taste. In a shallow bowl, combine the flour and paprika. In another bowl, beat the eggs. Dip each fish fillet in the eggs, then roll in the flour mixture, turning to coat all sides. Set the flour mixture aside. Heat 3 tablespoons of vegetable oil in a frying pan over medium-high heat. Working in batches, fry the fish until cooked through, 3-4 minutes per side. Transfer to a plate and cover with foil.
  3. Wipe out the skillet. Heat the remaining 1 tablespoon vegetable oil in the skillet over medium-high heat. Stir in 3 tablespoons of the reserved flour mixture, add the chicken broth, and 1/4 cup water; bring to a simmer, stirring constantly. Add the milk, cream cheese, and parsley; cook, whisking, until slightly thickened, about 2 minutes. Season with salt and pepper to taste. Divide the fish among plates. Drizzle with the sauce and sprinkle with paprika. Serve with green beans.
