Kid-Friendly: Strawberry French Toast Rolls

topcook.tomathouse.com

Ingredients:

  • 1/4 cup cream cheese, room temperature
  • 2 tbsp. + 0.5 tbsp. sugar
  • 6 slices stale white sandwich bread, crusts trimmed
  • 5-6 strawberries (about 0.5 cups), diced
  • 1/4 cup heavy cream
  • 2 large eggs, beaten
  • 1 tbsp. ground cinnamon
  • Maple syrup, optional

Preparation:

  1. Preheat oven to 190°C, line a baking sheet with parchment paper and spray with cooking spray.
  2. In a small bowl, combine the cream cheese with 2 tablespoons of sugar. Roll each slice of bread flat with a rolling pin and spread with 1 teaspoon of the cream cheese mixture. Place 2 teaspoons of diced strawberries on one end of each slice. Starting at that end, roll each slice into a log. Press the seams to seal the rolls, and reinsert any escaping filling if necessary.
  3. In a small bowl, whisk the cream and eggs. In a shallow dish, combine the remaining 1/2 cup sugar and cinnamon. Dip each roll in the egg mixture to coat completely, shake off any excess, and then coat them completely in the cinnamon-sugar mixture. Arrange the rolls evenly on the prepared baking sheet, seam-side down.
  4. Bake the rolls until golden brown and coated with a crispy sugar crust, about 15 minutes. Let cool for 5 minutes, then transfer to a cutting board. Trim off any excess caramelized sugar and cut each roll in half diagonally (be careful when cutting, as the filling will be hot). Serve the rolls on a platter with maple syrup, if using.
  5. Note

Don't leave your child unattended in the kitchen. Limit them to tasks appropriate for their age.
