Ingredients:
- 1 package (800 g) frozen sliced potatoes
- 1 can (280 g) condensed cheddar cheese soup
- 1 can (140 g) of unsweetened condensed milk
- 1 can (55g) chopped pimento peppers
- 1 medium onion, finely chopped
- 1 and 1/4 cups grated cheddar
Preparation:
- Preheat oven to 350°F (175°C) and lightly spray a medium casserole with cooking spray; set aside.
- Microwave the potatoes according to package directions for 5 minutes. In a medium bowl, whisk together the cheese soup and evaporated milk until smooth. Arrange half the potatoes in the bottom of the prepared casserole.
- Layer half the pimento peppers, onion, soup mixture, and grated cheddar. Repeat layers. Bake in the preheated oven for 45-55 minutes or until bubbly.
