Ingredients:
- 1.5 cups premium flour
- 0.5 tsp baking powder
- 0.5 tsp of soda
- 0.5 tsp salt
- 0.5 tsp ground allspice
- 170 g unsalted butter, softened
- 3/4 cup firmly packed light brown sugar
- 0.5 cup granulated sugar
- 2 large eggs
- 2 tsp vanilla extract
- 1.5 cups of oatmeal
- 3/4 tbsp. dark chocolate granules
- 0.5 cup sweet coconut flakes
- 0.5 cup chopped pecans
- 0.5 cup chopped mixed dried fruits, such as mango, pineapple, and papaya
Preparation:
- In a medium bowl, combine the flour, baking powder, baking soda, salt, and allspice. In a large bowl, beat the butter and sugar with a mixer on medium speed until fluffy, about 3 minutes. Beat in the eggs one at a time, then add the vanilla extract.
- With the mixer on low speed, add the flour mixture in two additions. Then, using a wooden spoon, fold in the oats, chocolate chips, coconut, pecans, and dried fruit until evenly combined. Cover the bowl with plastic wrap and refrigerate for at least 30 minutes or overnight.
- Position oven racks in the upper and lower thirds of the oven and preheat to 350°F (175°C). Line baking sheets with parchment paper or silicone mats.
- Drop the dough, 1 tablespoon at a time, onto the prepared baking sheets (you should get about 12 cookies on each sheet).
Bake until the cookies are golden brown around the edges and the centers are just starting to brown, 17-20 minutes. Let cool for about 5 minutes, then transfer them with a spatula to a wire rack to cool completely.
