Ingredients:
- 0.7 kg sweet pork spiral sausage
- Unsalted butter to grease the pan
- 1 cup flour
- 1 tbsp. sugar
- 1 teaspoon coarse salt
- 4 large eggs
- 1 cup of milk
- 1 tbsp mustard + extra for serving
- For serving: mustard of different types
Preparation:
- Preheat oven to 200°C.
- Lightly grease a seasoned cast iron skillet with butter. Place the sausage in the skillet and bake until almost cooked through, about 15 minutes.
- Meanwhile, in a medium bowl, combine the flour, sugar, and salt. In another bowl, whisk the eggs with the milk and mustard until smooth. Fold the liquid mixture into the flour mixture to form a slightly lumpy batter.
- Carefully pour the batter over the almost cooked sausage and continue baking until the dough is set and golden brown, about 25 to 30 minutes more.
- Serve the toad in the hole hot in a frying pan with mustard.
