One-Pot Caprese Pasta topcook.tomathouse.com
Ingredients:
- 3 cups chopped tomatoes
- 450 g whole grain spaghetti
- 4 tbsp of water
- 2 cloves garlic, chopped
- 1/4 tsp red pepper flakes
- 0.5 tsp dried oregano
- 1 teaspoon olive oil
- 1/2 cup tightly packed fresh basil leaves, plus extra torn leaves for serving
- 1 tbsp. grated mozzarella
- Shredded Parmesan cheese, optional
Preparation:
- Combine the tomatoes, spaghetti, water, garlic, red pepper flakes, oregano, and olive oil in a saucepan and bring to a boil. Reduce heat and simmer, stirring occasionally, for 10-12 minutes, until the pasta is al dente.
- Once the pasta is cooked, remove from the heat and add basil, mozzarella, salt, and black pepper to taste. Serve with Parmesan cheese, if using.
