One-Pot Caprese Pasta

Ingredients:

  • 3 cups chopped tomatoes
  • 450 g whole grain spaghetti
  • 4 tbsp of water
  • 2 cloves garlic, chopped
  • 1/4 tsp red pepper flakes
  • 0.5 tsp dried oregano
  • 1 teaspoon olive oil
  • 1/2 cup tightly packed fresh basil leaves, plus extra torn leaves for serving
  • 1 tbsp. grated mozzarella
  • Shredded Parmesan cheese, optional

Preparation:

  1. Combine the tomatoes, spaghetti, water, garlic, red pepper flakes, oregano, and olive oil in a saucepan and bring to a boil. Reduce heat and simmer, stirring occasionally, for 10-12 minutes, until the pasta is al dente.
  2. Once the pasta is cooked, remove from the heat and add basil, mozzarella, salt, and black pepper to taste. Serve with Parmesan cheese, if using.
