Cinnamon Ear Cookies topcook.tomathouse.com
Ingredients:
- 1 sheet puff pastry, defrosted
- 1 cup sugar, divided
- A pinch of coarse salt
- 1/4 tsp cinnamon
Preparation:
- Preheat oven to 230°C.
- Mix 0.5 cups of sugar with coarse salt and pour onto a flat surface, such as a cutting board or marble. Place a sheet of puff pastry on top of the sugar mixture.
- Mix 0.5 cups of sugar with cinnamon and spread evenly over the puff pastry. Don't just sprinkle it, spread it in an even layer. Lightly roll the dough with a rolling pin into a 32 cm square, pressing the sugar into the top and bottom. Fold the sides of the square toward the center, bringing them halfway to the middle. Fold them again so the two flaps meet exactly in the center of the square.
- Then fold one half over the other, like closing a book. You'll have six layers. Cut the dough into 2cm-thick slices and place them, cut-side up, on parchment-lined baking sheets.
- Bake the cookies for 6 minutes or until the sugar caramelizes, then flip them with a spatula and bake for another 3-5 minutes, until caramelized on the other side. Transfer them to a wire rack to cool.
