Ingredients:
Chicken
- 8 boneless, skinless chicken thighs, trimmed of all visible fat (about 1.5 lbs.)
- 0.5 tsp. homemade seasoning, see recipe below
- 1/4 cup low-fat yogurt or kefir
- 0.5 tsp hot sauce
- 2 egg whites
- Zest and juice of 1 lemon
- 1 and 1/4 cups crushed cornflakes
Homemade seasoning
- 1 tbsp. salt
- 1/4 cup garlic powder
- 1/4 cup black pepper
Preparation:
- Preheat oven to 375°F (190°C). Spray a large cast-iron skillet with nonstick cooking spray and heat over medium-high heat.
- Sprinkle the chicken with the homemade seasoning. Combine the buttermilk, hot sauce, egg whites, lemon zest and juice in a large bowl and toss the chicken to coat it on all sides.
- Place the crushed cornflakes in another large bowl. Roll the chicken in the crumbs, pressing firmly until they adhere, then place them in the skillet and bake in the oven.
- Bake until chicken is cooked through and browned, or a meat thermometer inserted into the thickest part of the thigh reads 165°F (74°C), 40 to 45 minutes.
Homemade seasoning:
Combine salt, garlic powder, and black pepper in a bowl and store in an airtight container for up to 6 months (1.5 cups of seasoning).
