Ingredients:
- 3 cups premium flour
- 1 tbsp baking powder
- 0.5 tsp salt
- 1.5 cups of warm water
- Vegetable oil, for frying
Preparation:
- Place the flour, baking powder, and salt in a large bowl. Whisk well, then add warm water and mix until a dough begins to form. Turn the dough out onto a lightly floured work surface and knead. Do not overmix. Then place the dough in the bowl and refrigerate for 0.5-1 hour.
- Heat oil in a frying pan or saucepan to 175°C. Lightly flour the work surface and roll the dough into baseball-sized circles. Use a knife to cut a hole in the center (this will help the dough stay flat when frying). Place in the oil and fry until golden brown. Flip and fry the other side until golden brown. The flatbread will be ready in about 3 minutes, depending on the oil temperature and the thickness of the dough.
- Serve the finished tortillas with your favorite toppings, or top them with chili and cheese, then lettuce leaves and tomatoes, onions, green chilies, and you've got an Indian taco.
