Fried beet greens

Ingredients:

  • 2 beetroot tops, washed and cut into 5 cm pieces.
  • 2 cloves garlic, crushed
  • 1 teaspoon crushed red pepper flakes
  • Zest and juice of half a lemon
  • Olive oil, for frying

Preparation:

  1. Heat a medium skillet with olive oil over medium heat until shimmering. Add the beet greens and garlic and stir until wilted and softened, 5-8 minutes. Add the red pepper flakes, lemon zest and juice and stir. Season with salt and pepper to taste.
